Finish the game and let the credits run. When the credits are finished, check the main menu to find a new option, Normal. Highlight Normal, press u, and the option will change to Hard. Now you can play a harder version of the game.
Unlimited Money
Enter the Apple Market and kick the tin can into the Jetlag Bakery to receive $1000. You can re-enter the market and collect another $1000 using the same method infinitely.
